Baba Ghannouj
You can enjoy variations of Baba Ghannouj, as a national dish, from Iraq, Armenia, Jordan, Lebanon, Palestine, Egypt and Turkey. It actually means a spoiled father in Arabic, with Baba means father and Ghannouj means spoiled. It is made by grilling eggplants on the broiler, then mixing it with lemon juice, salt, and Tahini. It is eaten with pita bread. It is considered a mezze.
