shkembe chorba
A tripe soup very popularin Bulgaria, used as a breakfast (after drinking), lunch, dinner, supper, brunch, road-trip meal, festive dish. As a practical joke to non-Bulgarians. It is characterised by a very strong smell, even before you add up to 50% of its volume in vinegar, garlic and chilli powder. It is best to eat it at the worst possible locations, such as provincial truck stops, old train stations and such. Widely popular as a hangover remedy.
